Mango-Nutella Pancake


 

Summer is going to end soon here in the US and so are mangoes! I bought a box of mangoes from the Indian grocery store last week. So, to enjoy this season’s last mangoes, I have planned a full week of Mango Mania at home, which means we are going to try innovative recipes with mango. To start with, I thought of making this Mango Nutella Pancake. As schools are about to start in 2 weeks here, I was thinking of different options to make for breakfast for my kids; one that they would enjoy eating and that would be easy for me to make as well. And I find pancakes as one of the best breakfast options to prepare in the morning as it doesn’t need a lot of preparation and all the ingredients are mostly available at home. We can try different fruit options like bananas, strawberries, raspberries and blueberries to enjoy different flavors. This is a best option to include fruits in the breakfast for kids. And kids would love anything that comes with nutella, wouldn’t they??

 

For those who don’t know, a pancake is a flat cake- often thin and round- prepared from a starch-based batter that may also contain eggs (optional), milk and butter, and cooked on a hot surface such as a griddle or frying pan, often with oil or butter. I prepared an eggless version today by adding mangoes to the regular pancake batter. And I experimented with some nutella spread on the top and it tasted really amazing! Those who are bored of the regular pancakes should try these mango pancakes. It is an innovative way of having mangoes in your meals. I’m sure you would love them!

Mango Pancake Recipe:

Take a large bowl and combine the all purpose flour, milk, vegetable oil, melted butter, vanilla extract, baking powder, sugar and salt.

Whisk all of them nicely to avoid any lumps and til’ it forms a smooth and thick batter.

Peel the mangoes, cut them into slices and blend them into a pureé with the help of a blender, without adding any water to it. Add this pureé to the flour mix and whisk well. The Mango pancake batter is ready.

Keep it aside for 5-10 minutes to let the batter set.

Heat the griddle over medium heat and apply some butter on it. When the griddle is hot enough, ladle about 1/4 cup of the batter onto it, to make a pancake. Cook until bubbles break the surface of the pancakes, and the undersides are golden brown, for about 2-3 minutes.

Flip it to the other side with a wide spatula and cook for another 1-2 minutes on the other side. Transfer it onto a platter and repeat the same procedure with the remaining batter to make more pancakes. Keep brushing the griddle with the butter as needed.

Spread the nutella on one side of the pancake and stack them; one on top of the other. Drizzle some maple syrup on top and serve immediately.

 

When I had the first bite, the first flavor to unfold on my tongue was the sweetness of the maple syrup, quickly followed by the rich and sugary touch of nutella and the delicate, buttery and tropical flavors of the mango pancake itself. The coolness of the syrup and the warmth of the pancake complement each another so well, bringing out the subtle flavor of the pancake. Before I could try another bite of it, all that remained on the plate was dribbles of syrup. Yes, my children had finished all of them while I was still indulging on the first bite itself. I can’t wait to make these mango nutella pancakes again and this time I will first save some for myself! :’)
