Riceball Manchurian



 

Yesterday when I was at the hospital with my daughter my husband prepared lunch at home. As he doesn’t cook very often, he didn’t know how much rice to cook, and as a result, I had a lot of rice left over. I wasn’t in a mood to just heat it and eat with the curries, so I thought of making some lip smacking snack with it so that kids can enjoy eating it. My kids love eating veg manchurian every time we go to an Indian restaurant. Our food menu is fixed on veg manchurian dry(no sauce) and paneer butter masala. That’s why I thought of preparing manchurian using the leftover rice that I had. And then I prepared this Riceball Manchurian which my kids loved. So, here I share the recipe with you all.

Riceball Manchurian Recipe:

First, heat the leftover rice in the microwave for two minutes. Mash it smoothly with the help of a serving spoon. Take a big bowl and put the mashed rice into it. Then add chopped vegetables to it. You can add any vegetables of your choice, but make sure not to add any juicy vegetable like the tomato. Here I added some chopped cabbage, green and yellow bell pepper, beans and grated carrot. As I mentioned in my other post, whenever I make some food I try to make it look colorful. I try to balance all the colors of nature so that it is a feast to our eyes and you get that nice feeling of trying it. We will come to know the taste only after trying it, but what tempts us to eat is the appearance. That’s why I like to add colorful vegetables in my food.

 




 

I added some freshly grated ginger (you can use the ginger garlic paste if you want). Then add the spices. I just added some turmeric powder, red chili powder and salt to taste. To give it the desired consistency to make the balls I added some corn flour to it.  I also added a pinch of bicarbonate soda to the mix. I mixed them well and shaped it into round balls. If your rice is too chalky and you’re not able to make it into balls then try to add a little bit of water to it. It will definitely help. My rice mix was perfect, so I didn’t need to add any water. The shape was perfectly round. They looked like motichoor laddoos. Haha….

Heat the oil in a pan and deep fry the rice balls. Keep the flame in low and cook them until they turn into nice golden brown color. Remove them from the oil and keep them aside. Drain the excess oil using a paper napkin. They actually look very nice. We can eat them as it is like a snack. But as I wanted to make it in the manchurian style, I still needed to add some more sauce to it.

For Manchurian Sauce:

Heat 2 tbsp of oil in a pan and add finely chopped onions. Add some salt to taste. Remember not to put excess salt as our rice balls already have enough salt in them. Fry it for two minutes and then add chopped garlic and green chilies to it. I added a bit more of garlic as my kids love the taste of fried garlic. Once they are lightly brown add some ketchup and red chili sauce.  I didn’t add any soy sauce as somewhere on the internet I read it’s not good for the health. So I just skipped it. Fry them for another two minutes and then add in the fried rice balls.  Sauté it well so that the rice balls get coated evenly with the sauce. Toss it with some chopped spring onions and turn off the flame. As I wanted to have it as a snack, I didn’t add any gravy to it. If you want the sauce, you can mix the cornflour with water and add it to the above onion garlic mix and bring it to a boil, before you add your rice balls to it. And then Riceball Manchurian is ready to serve.

Doesn’t it look delicious?? Try it out sometime when you are bored of having the regular Gobi Manchurian or veg manchurian and you want to try something different. This is also a good option to use the leftover rice without just reheating and eating as a boring meal, but instead, you can have it as a lip smacking snack in a few minutes. It won’t take long to prepare if you are quick in cutting your veggies. I kept the oil pan ready so that by the time I finished making the rice balls the oil was hot enough to fry. So it took me about 30-40 minutes for the whole preparation. But, it didn’t even take 10 minutes for my children to finish eating them! 😀 I’m happy that they enjoyed it. Hope you’ll like it too!
