Salad Fiesta





Ever since moving to Boston, my elder daughter Sheetal has become a huge fan of a salad place popular here. Every time we go out for dinners, her first choice is a salad. But for the health conscious vegetarians out there, they don’t have many inventive recipes for salads. And eating the same salad every time has become a bit boring. So, keeping this in mind, last night, I made this salad to give a burst of flavor to our tastebuds. Every time I prepare food, I ensure that it is not only pleasing to the tongue but also appeals to the eye.

This salad is a combination of kale, lettuce, baby spinach, cherry tomatoes, cucumber, onions, corn, grated beets, coloured bell peppers and cottage cheese. As for the dressing, I always prefer to use freshly prepared ones. So, I added salt, black pepper, red chilli flakes, lemon juice and extra virgin olive oil to the greek yogurt and stirred it up nicely. Then topped it up with some grated parmesan cheese and olives (optional). Keep it in the refrigerator for some time if you want to have it cold. My kids loved it and I’m planning to make it again this Sunday, on Father’s day for brunch. You can also add in bread crumbs or pita chips for some crunchiness. This salad is great because you not only get your veggies but you get protein with the cottage cheese too. Try it out sometime when you’re craving a light meal or in a mood to have something refreshing . Hope you enjoy it! 🙂
